I had a really wonderful experience a few months ago… I attended a week-long vegan and raw foods immersion with the world-famous vegan chef, Mark Reinfeld. Mark is the co-founder of Vegan Fusion, a wonderful group that offers a wide range of vegan services. The class was amazing; I met great people, had some very thought-provoking philosophical discussions about the state and health of our planet as well the health of people. The best part of the class though is that we ate absolutely incredible food! Mark’s mission is so aligned with mine, I just love what he is doing! What I love about Mark is that he shows people that vegan, healthy food is not only delicious but can also be beautiful as you will see from the amazing pics below. He encourages people to tap in to their artistic abilities and get creative when preparing meals. He really emphasizes the whole eating experience from appreciating food for its beauty, health benefits and the spiritual experience of a compassionate diet and lifestyle. Mark also shared so many fun tips for people who are serious chefs, these tips are also quite helpful for those that aren’t as interested in spending a lot of time in the kitchen but do wish to understand how they can cook more healthfully for themselves.
Mark went vegan for the same reason as I did, for the animals. He quickly realized the many additional benefits of a vegan diet; feeling great, living a healthier lifestyle and lessening your environmental footprint. He helps so many on their journey with his many vegan successful business ventures and has done some great things throughout the world with plans to continue his work. The other great thing about Mark is that he holds a Master’s in Holistic Nutrition and can really help people understand the basic nutritional properties of foods we eat. He is also able to debunk many vegan myths and mis-information and provide nutrition information to help vegans thrive and live a long, happy, healthy life.

As I mentioned previously, Mark has written some really beautiful cookbooks, they are kind of known as vegan bibles, I would say. Mark co-authored The Taste Of The East, The 30-Minute Vegan and The Complete Idiot’s Guide to Eating Raw. He is the author of The 30 Minute Vegan’s Taste of Europe, and The 30 Minute Vegan’s Soups On! I purchased a few of these great cookbooks and also gifted a few to my family.
