Leaving for NYC today to become certified as a Vegan Lifestyle Coach. I am really looking forward to what I feel will be a life changing event! I will fill everyone in on what I learned and my experience when I complete the course.
In the meantime, I wanted to share these yummy hashbrowns I made the other night. I like to call them Sassy hash browns.
Cook several diced potatoes in around a tablespoon of until done, add several handfuls of kale and some diced onion and garlic, cook until these are soft. Turn off the heat and add a tomato that has been cubed. Stir all together. I then plated it, topped with Daiya cheese and broiled until the cheese had melted, 3-5 minutes. Enjoy!
