To all the mothers out there, even pet mommies (like me!) 🙂
On this day, let us all remember the other Mother’s in the world that are subject to unimaginable cruelty in factory farms and in other industries that exploit animals. In these industries, babies are ripped from the mourning mothers and families are torn apart. These industries would like to hide these terrible activities from the public leading them to believe that industrial agriculture production breeds “happy animals”, this is hardly the case. These sentient, sensitive and intelligent beings are treated terribly just for someone’s quick meal.
On a happier note…. Do you know what always correlates with Mother’s Day??? Asparagus season.
One of my friends hand picked some locally grown, wild asparagus for me and it was mighty tasty.
I just love asparagus……
Strawberry and Asparagus Salad
- 2 cups fresh strawberries, halved
- 1/4 of a red onion chopped
- Handful of chopped, blanched and cooled asparagus
- 2 tbsp slivered almonds
- 1 tbsp balsamic vinegar
- 1/4 cup olive oil or flax seed oil
- 1 tsp dijon mustard
- juice from 1/2 a lemon
Mix the prepared strawberries, red onion, asparagus, slivered almonds together in a bowl. Blend or whisk the wet ingredients together. Add the wet ingredient the veggie and fruit mixture and stir until the the fruits and veggies are fully covered. Add more lemon or other flavors you may like. You could also add some maple syrup if you like it sweet. Chill a few hours in the refrigerator and enjoy!!!
The picture above didn’t come out to great but the meal tasted amazing!!! I think the leek did the trick, I had some leftover rice so put it to use in this recipe.
Asparagus and Leek Fried Rice
- 1/2 chopped leek (mostly the white part)
- 1-2 tbsp oil
- 1 -2 cups of rice (brown or white)
- Handful of asparagus (blanched)
- 1/4 cup nutritional yeast
- 1-2 tbsp slivered almonds (pine nuts would also be good)
- Juice from 1/2 lemon
Stir-fry the chopped leek in a little oil until translucent, if needed add some more oil and stir in your already cooked rice. Stir fry on medium heat a few more minutes. Add the remaining ingredients and season to your liking. (soy sauce, bragg’s liquid aminos, whatever you feel like). Warm just a bit longer. I also added some flax oil over the top just at the end. I served this dish with some veggie sausages.
The beauty of fried rice is that you can do so much with it. You can also add tons of other veggies and beans. Yum!!!
