Parsnip, Carrot and Lentil Soup
I just made this soup for my parents and it was quite a hit. Filled with vitamins, minerals, healthy fiber and plenty of plant powered protein. 100% vegan 🙂

I also made these the other night and they were fantastic as well. So many spices and flavors, the secret was the marinade. Mexican food can very easily made into something vegan, very healthy and incredibly tasty!
